Maple Glazed Roasted Delicata Squash by @plantlovinturk 💛
Recipe
Ingredients 
2 small delicata squash, seeds removed and cut into ½-inch rounds
2 tablespoons pure maple syrup
2 tablespoons light olive oil
1/4 tsp pink Himalayan salt
Cracked pepper 
Pomegranates 
Greens

Maple White Balsamic Dressing 
1/2 cup extra virgin olive oil
1/4 cup white balsamic vinegar
2-3 tablespoons pure maple syrup
1/2 teaspoon pink Himalayan salt
1/4 teaspoon freshly-cracked black pepper
1/4 teaspoon Italian seasoning (store-bought or homemade) *see homemade recipe below 👇🏼👇🏼
Italian seasoning 
INGREDIENTS:
1 1/2 teaspoons dried oregano
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage

Mix all seasonings together in a bowl until we’ll combined. Use immediately or store in a sealed container.

Preheat oven to 400 degrees. Place the squash in a large bowl and drizzle it with the olive oil, maple syrup and sprinkle with salt and pepper. 
Lay out the rings on a baking sheet lined with parchment paper and baste with the glaze that is left in the bowl.
Roast for 12-15 minutes, then flip the squash rings over and roast for another 6 minutes.  Don’t forget to baste with glaze once again after you’ve flipped them. 
Remove from oven and let cool for a few minutes 
Serve over greens sprinkled with pomegranates, pepitas and desired greens. Drizzle with Maple White Balsamic Dressing. Enjoy! #letscookvegan

3 large sweet potatoes, scrubbed clean and dried
2 tablespoons melted coconut oil (or avocado oil)
1/2 teaspoon himalayan pink salt

avocado cashew sauce
1 cup raw sprouted cashews (soaked for at least 6 hours)
1 fresh lime, juiced
1 spring onion or the white part of scallions, optional
Himalayan pink salt or sea salt, to taste
Cilantro, scallions, smoked paprika and other desired toppings

Preheat oven to 400 degrees F and grease baking sheet. Chop sweet potatoes into matchsticks by halving, halving once more, then cutting into strips. Toss in oil until well coated. Season with salt and toss again. Arrange in a single layer on baking sheet and bake for around 20 minutes, then flip for even cooking. Bake for another 10-15 minutes or until golden brown and crisp.

However foods offer us more than just calories. Traditionally 'healthy foods' tend to be advantageous for weight loss because they are more voluminous per kcal, more filling and more micro dense. All of this creates a healthier, less hungry environment, which makes sticking to the diet more possible. 🥕 ⠀

quick meal prep💪🏼 I always keep cut lemon in the fridge so they’re easy to grab, I drink sooo much more water when I have it with lemon 🤭 this prep took me no time, cooked some turkey breast & shrimp to have for something quick, used leftover spaghetti squash & jasmine rice... sautéed some brussel sprouts, asparagus, leeks, mushroom and spinach together all topped with pink salt 😯😛
