Quick and Easy Tofu scramble
1 package extra firm tofu
1 yellow onion
1 small crown broccoli
1 green pepper
4 cloves garlic
1/2 cup mushrooms
1 tbl cumin
1 tbl chili powder
2 tsp oregano
1 tsp smoked paprika
1 tsp turmeric
2 tbl lemon/lime juice
2-3 tsp soy sauce or liquid aminos
2 tbl coconut oil
Chop all veggies first and grate carrot. Heat oil over medium heat and cook onion for 3-5 min until golden. While onions are cooking mix together seasonings. Add 1/4 cup water to seasonings, stir and set aside. Add pepper, broccoli, mushrooms to pan with onions. Pour half of seasoning mix to pan. Cook for 3-4min. Drain tofu of water with paper towel/ dish towel (doesn’t have to be perfect) crush tofu with fork to break into a crumble. Push veggies to one side of pan and add tofu to the other side. Pour remaining seasoning mix over tofu. Cook for 2 min then stir veggies and tofu together. Add carrot, garlic, soy sauce, and lemon juice. Stir and let cook for 1-2 min. When someone says that all we have is the present moment. It is true. Too many times we try to live in the past by overwhelming ourselves with thoughts of past actions and sometimes live in the “if only I had..” or “what if”. Instead of enjoying what the present moment has for us, we dwell on or focus about past experiences. Some past experiences are joyous and there is reason why we have memory, but we are not designed to live there. Nor are we designed to live in the future. When we think of the future, all it is, is thinking and our imagination. We have not lived the future. Sometimes we get so caught up and focused on what our future will be and again aren’t fully living and enjoying what the present moment has gifted us. We create feelings of anxiety and stress over what we cannot truly possess. If you think about it, the future never actually comes. We are living in a series of present moments. Yes we move forward in the thought of time, that what we did three minutes ago is the past, but we are always in the present moment. Embrace the present moment and live it to the fullest. 🕰

If you’re new around here I wanted to share a little about my 2018 project! I’ve always been a health nut and focus a lot of my time on creating healthy plant based recipes and sharing some of my favorite workouts. But there is so much more to wellness than just nutrition and hitting the gym. I’ve been learning more about holistic wellness, which includes much more than just diet and exercise. I mean, thanks for trying, try again though homies lol.... I’ve had a few places say they got vegan options and they simply get confused I feel with vegetarian..... I don’t get mad really, I just leave, but especially a restaurant should know the differences...
Question for my vegan friends! Do you ever get cravings for certain things? And when you do, how do you solve them? Ive been doing really well on a plant based diet for awhile now.. no cravings for meat or cheese which is surprising and I’m pleased with that. There’s just one thing I’ve been longing for lately. And it’s weird because the first time I dabbled in plant based eating over a year ago, I got to the 3-4 month mark and started craving it too. It’s fish!
Not just any fish, very specific- White fish. Sea bass, flounder, Mahi mahi, walleye etc. I just want white fish so bad! But I don’t want to eat it. What do I do? Real talk here, I’m starting to wonder if there’s something my body is missing or getting low on that white fish happens to have.. I’m going to look into that. But for now, I would highly appreciate any suggestions! Even if your cravings differ from mine, I’d love to hear substitutions for things! and I think this is a great topic that many baby vegans (like myself) will find helpful. 😃
