Thyme & Black Pepper Butternut Squash Fries 🍟✨ My new favourite served up with some delicious @granluchito salsa 🍅
I love making different chip alternatives. Don't get me wrong, I love the classic potato chips and/or wedges 😍 But it's nice to have a change sometimes, you know? These butternut squash chips are my latest creation and they're a real winner! 💫 I cooked them in a little olive oil, fresh thyme and plenty of black pepper for a mouth-watering taste! Perfect as a side to a veggie burger 🍔🥗🍟 HOW TO - simply pre-heat the oven to 160 degrees celsius. Cut the butternut squash into chip shapes. Place on a baking tray with 2 tsp olive oil, 2 tbsp de-stemmed fresh thyme and 3 full thyme stems, plenty of black pepper and a little salt. Mix everything well then cook in the oven for 25-30 minutes 💥

AVOCADO and TOMATO TOAST @leeholisticfitness❤❤😍😍👌for busy days when you still want to show your care and LOVE❤❤❤❤ share it, tag it, and most important eat and enjoy it😁😀
1/2 cup balsamic vinegar
2-3 slices hearty, seeded bread
2 small heirloom tomatoes, thinly sliced
1/2 a ripe avocado
1/4 cup fresh basil, chopped
Freshly ground black pepper
Make the balsamic reduction by adding the balsamic vinegar to a small saucepan over medium-high heat.
Bring the balsamic to a boil, whisking constantly.
Reduce heat and simmer for 10-15 minutes or until balsamic has reduced by half and is thick enough to coat the back of a spoon.
Make sure you keep an eye on it -- it burns quickly.
Slather each slice of bread with a drizzle of olive oil and toast.
Evenly divide the avocado between the pieces of toast and use the back of a fork to smash the avocado.
Layer the sliced tomatoes on top of the avocado, sprinkle with fresh basil, and drizzle with the balsamic reduction.
Garnish with sea salt and black pepper.
Serve while hot
